Day 234 I'm a hairdresser now

The decision: 

Spend $100 on getting my hair professionally done  
OR 
Take the risk, spend $10 on a supermarket job and put $90 towards our America trip? 

No contest - you win hands down supermarket packet....



My choice of snack while waiting the 25 minutes for the colour to do it's thing...

The result! I'm pretty pleased, and even more pleased about the money saving....

It's okay isn't it??!

Okay, my Dad needs all your prayers, good vibes, positive thoughts and crossing of fingers and toes. Tomorrow is a massive day and years in the making. After being in constant pain with his back and suffering for years, he is booked in for a back operation, 5 hours of surgery that should, if successful, be an 80% improvement to his situation. The surgery will begin tomorrow morning.... so we are praying for the Surgeon's steady hands, a successful operation and a speedy recovery for Dad. Will update you on the results tomorrow. I'm on a roll at the moment with creating my own dishes for dinner -well nothing too special, but still!
Tonight was Field Mushrooms filled with Cherry Tomatoes, Fetta and Roasted Eggplant & Capsicum.


Again, like all the meals I cook... it is easy!

All you need is: Field mushrooms, cherry tomatoes, fetta, 1/2 eggplant, 1 green capsicum, 1 onion, 1 clove garlic, dried rosemary..

Pre-heat the oven to 200, slice the eggplant and capsicum into small pieces.. roast until ... well, until they are roasted :)

Take out the mushroom stem, but keep them as they will be used for the filling.

Melt some butter in the fry pan, and fry the mushrooms both sides for a few minutes..take out and put to one side.

Add the onion and garlic with some more butter and fry until soft, then add the cherry tomatoes, mushroom stems and a few shakes of dried rosemary, cook until the tomatoes are soft...

Add the capsicum and eggplant to the frypan to mix all the ingredients together...

Spoon the mixture into the mushroom and top with Fetta. Put into oven for 10 minutes or so, just to heat through and melt the fetta slightly.


I served this with a side of roasted Sweet Potato & Potatoes cut into chips and topped with some dried rosemary... what can I say? It was beautiful, tasty, healthy & easy!
