Guys, I promise you this... you and your whole family with love love love this meal. It's so easy to make (WHAT? ME, make an easy meal? Noooooo) and it's good for you too. Bonus!
You will need:
2 teaspoons peanut oil
2 medium brown onions
2 cloves garlic, crushed
2 tablespoons tikka masala curry paste
2 cups vegetable stock
1 cup of water
1kg butternut pumpkin, chopped
300g can chickpeas, drained and rinsed
1 cup frozen peas (we used broccoli)
1/4 cup low fat cream (60ml)
2 tablespoons chopped fresh coriander leaves
This is how to you make it:
1. Heat oil in large saucepan; cook onion and garlic, stirring, until onion softens. Add paste; cook, stirring, until fragrant. Stir in stock and the water; bring to a boil. Add pumpkin; reduce heat. Simmer, covered, 15 minutes or until pumpkin is almost tender.
2. Add chickpeas and peas to curry; cook, stirring, until hot. Stir in cream and coriander. Serve curry with rice.
No excuses.. get in that kitchen and start cooking!
